Banana Blueberry Protein Pancakes

When I was in college, I had a very set eating/working out schedule. Every morning, I would have my oatmeal, go to class, work out around 11:00, come home and either make these protein pancakes or my cake batter smoothie. I never ventured too far from that. That’s kind of how I am though…. Like I’m a very schedule oriented person and I pretty much eat the same thing everyday. I know that sounds boring, but whatever, that’s just me 🙂 I know what I like – lol! 

Anyways, these protein pancakes are literally the bomb.com and are my favorite thing to have on the weekends after my morning workouts. They are also literally so easy to make and have almost no cleanup thanks to my Ninja Bullet

Each serving makes about 7 little tiny pancakes and are packed with over 25 (g) of protein. The blueberries are my favorite addition and the “syrup” is a mixture of PB2 with a hint of organic maple syrup

Yum, yum & yum. 

Real quick though, if you are expecting these to be like fluffy – normal pancakes…. then you are going to be disappointed. I mean, they don’t have flour…. but the banana in them definitely gives them the perfect amount of fluff!

Ingredients
  1. 1/2 Banana
  2. 1 Scoop Vanilla Protein
  3. 1 Egg White
  4. 1 TBSP Whole Oats
  5. 1 TBSP Almond Milk
  6. 1/4 Cup Blueberries
  7. 2 TBSP PB2
  8. 1 TBSP Water
  9. 1 TSP Organic Maple Syrup
Instructions
  1. -First, start with the syrup. In a very small cup, mix the PB2 with water and stir until it forms a peanut butter consistency.
  2. -Then add in the syrup and stir.
  3. -Place on the side while you start to make your pancakes.
  4. -In a small blender, (I use my little Ninja) fully blend the banana, protein powder, egg, whole oats & almond milk.
  5. -Blend until it reaches a batter like consistency.
  6. -Meanwhile, start to heat up your pan and add coconut oil to it.
  7. -Once the coconut oil is melted and spread throughout the pan, pour the batter from the blender onto the pan to form mini pancakes.
  8. -Flip pancakes once they start to brown. Note - these cook very fast.
  9. -Once finished, place pancakes on a plate, cover them with paper towels and place in the microwave to stay warm.
  10. -Add blueberries to the pan and cook on high for 1 minute.
  11. -Pour the blueberries and the syrup over the pancakes and serve!
