Spinach & Chicken Sweet Potato Noodles

When it comes to cooking, every recipe has to hit 3 certain types of criteria. (1) It has to be healthy (usually high protein -low carb) (2) It must be easy to make (3) It can’t have a major clean up. 

This recipe has all of those things!

I’m literally not joking when I say we have this recipe, every week in our home.  It’s just that good. It’s our “go-to” because it is literally so simple and so scrumptious. Not only is it delicious & healthy, but it is also incredible easy to make. It’s kind of an on going joke with my sister because every time she stays the night with us, this is what I make lol. I don’t think she actually cares though because it is that good.  I’m not sure why there is such a misconception that healthy food has to be bland or boring but this recipe is not either of those things. 

I first had this recipe while sampling around my local Whole Foods one Sunday (lol) and then went home and doctored it a little bit. For the sweet potato noodles, you could always make them on your own with a spiralizer, but I just buy these pre-spiraled ones from Whole Foods and they make my life so much easier! Which by-the-way, Veggie Noodles are life and if you haven’t jumped on the Veggie Noodle train yet, you are behind 😉 

Kidding, but not because they are life. 

So anyways, yeah, like I said above, this recipe is amazing, easy to make, low carb and high protein!

Chicken & Spinach Sweet Potato Noodles

Ingredients
  1. 2 Large Chicken Breasts
  2. 1 Box of Sweet Potato Noodles or 1 Large Sweet Potato
  3. 4 Cups of Spinach
  4. 1 Yellow Onion
  5. 2 tbsp Extra Virgin Olive Oil
  6. 1 tbsp Italian Seasoning
  7. 2 Garlic Cloves
  8. Himalayen Salt & Pepper For Taste / Seasoning
Instructions
  1. -First, prep chicken by slicing it into bite size pieces and seasoning with salt / pepper.
  2. -Once the chicken is fully seasoned. In a large pan, pour 1 tbsp of olive oil and turn the stove onto low-medium heat. Add chicken to the pan to begin cooking. It should cook alone for at least 5-7 minutes.
  3. -While the chicken is beginning to cook, chop the onion and garlic. After everything is chopped, add remaining tbsp of oil to the pan, followed by the onion and garlic.
  4. -Once the onions starts to become translucent, add the pack of sweet potato noodles to the top of the pan, followed by the spinach.
  5. -Place a top on top of the pan and cook on low-medium heat for 5-7 minutes or until the noodles & spinach completely soften.
  6. -Once soft, remove top add Italian seasoning & a dash of himalayan salt to the top and mix everything together.
  7. -Let cool slightly and serve! Best served on the warm side.
Notes
  1. Optional: Add Parmesan!
