The Prettiest Lemon Blueberry Cake

If you follow me on Instagram, then you know that I made this pretty little lemon blueberry cake over the weekend and was very proud of my work. It’s a rare day that I make something and it look almost identical to what it was based off of, so I had to document the moment! 

This cake was seriously SO easy to make, while also being perfectly light and fluffy, making it the perfect spring cake. 

So whether you’re bored at home and looking for something new to make or you’re trying to find the perfect cake to bake your mom for Mother’s Day – I can’t recommend this Lemon Blueberry Angel Food Cake one enough! 


LEMON BLUEBERRY ANGEL FOOD CAKE 

WHAT YOU’LL NEED

MAKING THE CAKE

Following the instructions on the box to make your Angel Food Cake and pour into your Angel Food Cake Pan. It should mention this on the box but in case it doesn’t, be sure that you don’t coat your pan with non-stick spray!

Now that your batter is in the pan, add 1/2 cup of fresh blueberries and lightly mix them into the batter. Just make sure you don’t push them to the bottom. Cook cake as instructed.

Once your cake is done, take it out of the oven and let it cool by flipping it upside down and balancing it on any sort of metal soup can you might have. Let cake cool for 2-3 hours. 

Once the cake is cool, lightly wiggle it out of its pan and onto the cake stand or platter it will be served on. 

If serving the cake day of, continue onto the icing! If you are not serving until tomorrow, cover the cake and let it sit on the counter overnight and ice it just a few hours before serving. 

MAKING THE ICING 

In a bowl mix two cups of powdered sugar with the juice from 1-2 lemon. Start with one lemon and then slowly add juice from the second lemon only if needed. 

Next, slowly pour the icing all around the top of the cake letting it naturally fall on the sides. 

DECORATING CAKE 

Create the curly lemon slices and place around cake. Learn how to curl your lemons here. 

Then with the rest of your blueberries, place them all over the top of the cake, around the lemon curls and around the bottom of the cake as well. 

Lastly, taking small pieces of Baby Breath Flowers, place around and on top of the cake in all empty spaces to fill the areas.
