Chopped Detox Salad

Hi there!

I hope everyone had a great weekend! This weekend was really fun for me because my little from my sorority, Gabby, was in for the weekend, so it was really special getting to spend time with her!! It was a weekend fully equipped with spin class, lunches, Bentley walks, drinks by the pool and dancing. Basically a lot of much needed girl time! The one thing about girls weekends though, is that it’s lots of drinking and eating not-so-healthy. Sooo if your weekend was anything like mine, then this chopped detox salad will be just what your body is craving & begging you for.

It’s filled with so much nutrients and truly cleanses your body. I literally feel like my body is glowing it’s so happy after I eat this salad. It’s basically a ton of raw vegetables blended in a food processor and topped with a avocado citrus dressing. To say this recipe makes a large amount would be an understatement of the century though. I thought it would be appropriate to share on a Monday so that if you decide to make it tonight, then you can have it for the week! I usually make this Sunday or Monday night & then have it for lunch everyday that week, topped with chicken. Although I always feel bad adding meat because I originally found this recipe from The Glowing Fridge. She is super vegan & I love how strongly she feels about it, but personally, protein is a big part of my diet & I am not ready to make the transition right now. But, you guys should really check out her blog, it’s really great!

Anyways, this salad is great for lunch because it’s super refreshing and unbelievably filling. I have never had it and felt “blahhhh” afterwards.

You guys know that “blah” feeling. It’s not fun.

Ingredients

Salad

1 head cauliflower, roughly chopped
2 cups kale, chopped
2 cups red cabbage, chopped
2 cups baby carrots
1/2 of a red onion
1/3 cup fresh cilantro, de-stemmed and chopped (or parsley)
1/2 cup raw hemp hearts
1/2 cup raisins
1/3 cup sunflower seeds

CITRUS AVOCADO DRESSING

Flesh from 1/2 of an avocado
1/3 cup raw apple cider vinegar
juice from 1 lemon
juice from 1 lime
2 cloves of garlic
1/2 tablespoon fresh cilantro
1/2 tablespoon fresh ginger (or powdered)
1/2 tablespoon raw agave nectar (or maple syrup)
1/2 teaspoon sea salt
1/4 teaspoon black pepper


INSTRUCTIONS

In a food processor, shred cauliflower, kale, cabbage, carrots, onion and cilantro. Depending on how big your food processor is, who may have to do this is segments. Add to large bowl and mix together. Then fold in hemp hearts, raisins and sunflower seeds.
In a blender, combine all the ingredients for the citrus dressing and blend until well combined.
When you are storing is, make sure to keep the salad and dressing separate otherwise it will get super soggy.
