Welcome Back!
Who all is ready for Thanksgiving?? I know I am. If you follow me on Instagram, then you saw in a Q&A I did a few weeks ago that Thanksgiving is one of my absolute favorite holidays. I feel like it’s very under rated and low key the best holiday. I know Christmas gets all the attention (and don’t get me wrong, I love the Christmas time) but the actual holiday is always so anticlimactic. It’s all hype. Thanksgiving though? So much more relaxed, you still get to see your family, eat bomb food and the weather is usually so nice. While this year is looking a little different being that we won’t be getting to do the Turkey Trot and family won’t be coming in from out of town, I’m still really looking forward to it. We’re keeping it small due to Covid and hosting it outside, so hopefully the weather cooperates!
If you’re looking for a healthy dish to bring to your Thanksgiving this year – here are six LifetoLauren approved ones below!
Apple Pomegranate Harvest Salad
If you’re wanting to bring something green and filled with nutrients then this salad is the way to go! Not only is it beautiful and healthy but would be super easy to throw together too!
Honey Garlic Roasted Carrots
If you’re looking for simplicity – then go with this roasted carrots recipe!! I love roasting carrots like this being it enhances the flavor and somehow makes them so much sweeter!
Garlic Roasted Broccoli
Actually a recipe by yours truly 🙂
I started making this a few years ago and it’s always such a huge hit! Truly though, every time I’ve made it, I’d have to write down the recipe for at least three people.
My only advice would be to double or triple the recipe depending on the size of your group. Broccoli is sneaky because it really cooks down when roasted.
Ultimate Healthy Pumpkin Pie
Baking tends to make me nervous but this sweet little lighted version of a pumpkin pie looks like one that I could do!
Simple switches like greek yogurt instead of heavy cream make the world of difference.
Roasted Potatoes and Asparagus
Thinking about bring this recipe to our Thanksgiving this year! Easy and delicious! Love that it’s Whole 30 approved too.
Mashed Cauliflower
If you’re looking for a low carb alternative to mashed potatoes, try this cauliflower one instead! I’ve made this a few times before and while it takes a little bit of work – it’s DELICIOUS. Even my husband, the self proclaimed “mashed potato king” loved this recipe!
Which one would you try first?
xo,
Lauren
